Job Title: Pastry Chef De Partie

Location: Mayfair, London

Salary: Up to £36,000 per year.

Job type: Full Time – Permanent.

Purpose of Role:

To prepare dishes in conjunction with the Snr CDP’s, Sous chefs and Head Chef, and is responsible for ensuring that standards are maintained within the section. To understand the importance of ensuring that food quality for both guests and staff is of the highest standard. To keep the staff morale high so as to create a good working environment, and in turn having a positive effect on increased productivity level. To be a proactive member of the team, displaying respect for all colleagues at all times.

Main Duties:

Duties include but not limited to –

  • Produce all necessary food for all food service operations as required as instructed by the Snr CDP, Jnr. Sous chef, Sous chef or Head Chef.
  • Ordering of food for his/her section of the kitchen.
  • To ensure that all stocks are kept under optimum conditions.
  • To ensure that all mise-en-place is always freshly prepared, and on time.
  • To ensure that all dishes are being prepared to the correct recipe, and to the correct quantity.
  • To maintain the quality and quantity control in all aspects, from portion control to freshness of the product presented.
  • To ensure that all dishes reach the Pass correctly garnished the correct portion and size, presented on the prescribed serving dish in the prescribed manner.
  • To ensure that the section is being kept clean and tidy at all times.
  • To understand and comply with food hygiene regulations.
  • To ensure that junior chefs and trainees receive the right training and optimum guidance for their development and roles.
  • To ensure that any anticipated shortages are communicated promptly to the Sous chef or Head Chef.
  • To attend training courses as and when required, and ensure that all your team also attend.
  • To follow Health and Safety Policies and Procedures in every aspect and to be COSSH trained.
  • To ensure that all equipment is clean and in good working order.
  • To ensure staff are appropriately dressed and look professional.
  • To manage all staff within the section, and ensure all staff under your control are treated fairly and with courtesy & respect.
  • To ensure and enforce personal hygiene.
  • Ensure all Company Standards are adhered to in all departments at all times.
  • To be aware of and act in accordance with Fire Safety Procedures at all times.
  • To attend all statutory training as required by the company.
  • To cover sickness, and follow policies on absenteeism for the whole team.
  • To carry out any reasonable requests made by a member of the management team.
  • To ensure all Junior and Senior Staff are up to date with menu changes.
